Garlic Oregano Yam Oven Fries

I absolutely love Brandon Brazier's The Thrive Diet book.
A first book came to me via my sister, who herself loved it so much she sent me a copy. I in turn sent another copy to a friend and have since loaned my own copy on a couple occasion.

Today's recipes revisits an otherwise "junk" food and turns it into pleasure without guilt:
Garlic Oregano Yam Oven Fries

These are always a hit.
The house gets that wonderful smell of garlic and herbs, and pretty soon there's drooling family members gathering in the kitchen asking "how much longer until we eat?"
Happens every time.

***Useful TIP#1:Cold yam are hard to slice and will tend to break, making for unruly fries and a frustrated cook (and we don't want that...).
Avoid this by bringing the yams out beforehand, or run them quickly under warm water. Slicing becomes easy & smooth, with beautiful fries and a happy cook! ;P

In a bowl, mix garlic, chopped pumpkins seeds, herbs of choice (oregano, basil), salt and pepper if desired, and coconut oil. Then add the sliced yams and mix well to cover evenly.

***Useful TIP#2:Use a big bowl with a lid, throw in the fries with the mixture, put on the lid and shake the entire bowl all around. Dance with the kids (or dogs) while you do this. It's great fun and works wonderfully to cover all fries.***

Plan on 15 mn. prep time and 30-40 mn. in the oven.
I like to do the last 5 mn. on broil to give them a little more crisp at the end.
