Baking Powder Bread

Making bread gives a very particular sense of satisfaction rarely found elsewhere. I'm not sure why that is, it just it. I can tell you I'm like a little kid when I get my hot creation out of the oven...

The problem sometimes is having to wait for the dough to rise all day, and that's where baking powder bread comes in. Very convenient. Anytime of day, any moment that bread making bug bites, you can head over to the kitchen, pull out flour, baking soda and water, and voila, about 40-45 mn later, you've got bread!


How's that for wonderful?

Ingredients:
3 C Flour
1 tsp salt
1 C water
3 tsp chia seeds + water
1/4 C oil (or "wet" ingredient of choice)

In this case, I used 2 C Buckwheat and 1 C All-purpose Vegan flour* (see note below).
I use coconut oil exclusively in cooking.


Directions:
-Mix chia seeds and water and leave alone for a good 10-15 mn, until a gel is formed.
-Mix dry ingredients.
-Add all liquid ingredients to dry ingredients and mix well.
-Pour the batter into your dish of choice.
-Lightly score the top of the batter.

Bake 400 F for 40 mn.

*Note: Now, though I am rather found of buckwheat myself, that seems to be contrary to most people, in which case I recommend you choose your own flour of preference. Easy.  :)
***Useful TIP: if you do not have or cannot find chia seeds, no worries. I use them as "glue" to help maintain the bread, since I don't use things like dairy or eggs. I've also used ground flax seeds for the same purpose (mix directly with dry ingredients), so either will work.***

This bread turned out to be great with an evening bowl of mixed green, veggies, and olive oil-lemon juice-garlic-herbs dressing...
