Zucchini Avocado Soup

With all the zucchini coming out of the garden this year, finding new ways to eat it has been an interesting exploration. I've got about 3 recipes coming up with said zucchini, all a success. Yeah!

This first one is a cold Zucchini Avocado Soup.

What you'll need for the soup:
  • 1 C Water
  • 1 med Zucchini (about 3 C chopped, peeled)
  • 1 stalk Celery
  • 2 crushed Garlic cloves
  • 1 Avocado
  • 1 tsp dried Dill (or fresh if available)
  • sea salt, cayenne to taste
Add all ingredients except dill in a blender. Add water as you go and blend until smooth. Add dill last and blend briefly and adjust salt and cayenne to taste.

Pour in a bowl. Hmmm.

Optional Garnish, just because you can:
  • Chop a little tomatoes and/or cucumber and throw it in the bowl.
  • sprinkle a little paprika for color (see above)
  • Eat with crunchy crackers.
