Zucchini Mushroom Lasagna

Pasta is one of those carb heavy dishes that can leave you feeling sleepy and lethargic.
What to do, what to do? Have no fear, help is here!
That's right, you too can now enjoy the satisfying comfort food feeling of hot lasagna without making a bee line to the couch for that after-meal digestive nap.

To the Rescue... (drum role) ...

Zucchini Mushroom Lasagna Extraordinaire !

Guaranteed to please the palate. :D

Ingredients:
2-3 Zucchini, depending on size
1 Jar of Tomato Sauce of choice (herbs and garlic is great for this)
1 Lrg Onion
2-3 cloves Garlic
1 basket Mushrooms
dried herbs of choice
oil

Lasagna is all about layers, all you have to do is decide on the order.

***Quick TIPS:
- Typically 2 to 3 of the average sized grocery store zuchini will do, with smaller leftover pieces to be used later on in salads or stir fry, though I recommend peeling and slicing as you go.- I cheat a little here for convenience and buy a big jar of organic tomato sauce rather than make my own. The herb and garlic variety blends in nicely.- I use 1 full little basket of sliced murshroom.***

Getting the filling ready:
Chop onion and garlic and lightly stir fry in a skillet. After 2-3 mn., add the sliced mushrooms and dried herbs, and continue another 5 mn or so until tender and juice have been released. Remove from heat.

Assembly line

Layers go as follows:
1 - tomato sauce
2 - sliced zuchini
3 - mushroom, onion filling
4 - repeat steps 1-3
5 - tomato sauce
6 - sliced zuchini
7 - tomato sauce



In the end, you'll have 3 layers of zuchini and 2 inside layers each of filling and tomato sauce.
Place in the over at 350 F for 45 mn - 1hr or so, keeping an eye on it the last 15 mn.

Now, there may be a few amongst yourselves (or family members) that might, just might mind you, think this sounds very light and would like to add a little something more hefty, like, say, cheese... should that be the case, you can add a layer or ricotta cheese on top of the filling.
I actually did this once for a friend of mine for reasons as stated above... in the end she thought this lightler vegan version was just as satisfying if not more so, and has never since requested cheese. There you have it. I rest my case.
