Veggy Tacos

I like to browse other foodie blogs just for the fun of it. Off course I look for the vegetarian types, being generally uninterested in meat of any kind.
This time I found what sounded like a great idea from a blog I follow called Frugal Homesteads, and that is to make Taco "meat" by cooking lentils and brown rice together. Who would have thought?

I finally got around to it a few days ago and have been eating it for the last 3 diners! Yum! Who said leftovers are overated? We love leftovers at my house. In fact, there is not such thing. I generally cook enough for 2 or 3 days' worth, so we don't call it leftovers, it's just diner! I might even throw a couple spoons in my lunch salad too.

Here is what I ended up with:

Main Ingredients:
3/4 C dry lentils
3/4 C brown rice
4 1/2 C water
1-2 veggie broth cubes
1/2 tsp cumin
5-6 cloves garlic
Corn or flour tortillas

Pour water in a  big pot and turn the heat on high. Throw in all ingredients (except tortillas...).
Bring to a steady boil, reduce, cover and let simmer for 45-50 mn. until most of the water is absorbed.

That's it! So simple and yet sooo good!

Assemble the taco with your favorite chopped veggies and enjoy.

We chopped onions and tomatoes and added a little salsa on top.
Guacamole and sprouts would be wonderful on this too.
